Blueberry and Yogurt Stuffed French Toast

It's Blueberry season!

This french toast is the best of both worlds! It not only has nutritious ingredients like non-fat Greek yogurt and fruit, but it also doesn't skimp on some yummy ingredients like heavy cream and brown sugar. That means you can indulge in this breakfast treat and still feel good about what you are eating.

Ingredients:
  • 6-8 slices whole wheat bread
  • 3 eggs
  • 1/4 cup heavy whipping cream
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 2 cups non fat, plain Greek yogurt
  • 2 cups blueberries
Instructions:

Heat your skillet to approximately 425 degrees, or your griddle to medium/high. When you sprinkle water on it, the water should bead up instantly.

Beat eggs until creamy and add heavy cream and vanilla extract.

Dredge each bread slice in the egg mixture. Let excess drip off. Dip in brown sugar, just to coat. (This just gives it a little extra kick.) 

Place on greased griddle or skillet. Let each side of french toast get to a golden brown.  Don't rush. You want it to get nice and toasted, so the egg mixture will cook through. 

Place one cooked french toast slice on a plate. Add a dollop of yogurt and a handful of blueberries. Cover with another slice of french toast.   

Drizzle with syrup and enjoy!
